Wash the oyster mushrooms thoroughly, pat dry, and cut in half lengthwise. Then slice into pieces about 3 mm thick.

Rinse 4 cups (rice cups) of rice with water twice. Drain in a colander and let it rest for about 10 minutes. Do not leave it for too long. Because the rice will absorb too much water.

In a mixing bowl, combine the green cap soy sauce, oyster sauce, and sugar. Set aside.

Heat a pan over medium-high heat. Add 2 tablespoons of vegetable oil and wait until it's very hot. Add the oyster mushrooms and sauté until the edges start to turn golden brown, but don't cook them completely. Then add 5-6 cloves of minced Chinese garlic and sauté until the garlic starts to smell fragrant and slightly change color. Reduce the heat to medium-low. Add the prepared sauce and quickly stir to combine. Add 1 teaspoon of ground black pepper and 2 teaspoons of sesame oil. Stir again to combine.

Add the drained rice and stir gently to coat the rice with all the ingredients. Do not stir vigorously to avoid breaking the rice grains.

Pour all the ingredients into a rice cooker. Add water as usual according to the type of rice used (if using new harvest rice, add slightly less water). Shake to evenly distribute the rice. Press the cook button. When the cooker signals that it's done, do not open the lid yet. Let it rest for 10 minutes before opening the lid and gently stirring the rice to ensure it's fluffy and the flavors are evenly distributed.

[Instructions for making the seafood cream salad dipping sauce follow.] Put green chilies, garlic, cilantro with roots, basil leaves, sugar, fish sauce, lime juice, and water into a blender. Blend until the chilies are finely chopped but still visible in small pieces; don't over-blend until smooth. Then add 100 grams of mayonnaise and blend for a few more minutes until the ingredients are well combined. The taste will be slightly spicy, sweet, fragrant, and refreshingly tangy, with a creamy texture from the mayonnaise that perfectly balances the richness of the baked rice.

The hot, shiny baked rice with oyster mushrooms, fragrant with sesame oil and garlic, pairs wonderfully with the creamy seafood salad dipping sauce that's tangy, spicy, rich, and slightly sweet. It's an incredibly delicious and easy dish that will make you want seconds! If you want to transform an ordinary meal into something special, try this recipe.
